Lunch Boxes Made Easy

Back-to-school we go! Now, thanks to the Natural Foods Department at your local Kroger store and Horizon Organic, packing lunch has never been easier.

When Octavian started preschool last November I also started a new chapter of motherhood- one full of carpooling, schedules, germs and packed lunches.

Before Octavian started preschool he had never been in any kind of childcare or day care. He lived in a protected little bubble (relatively speaking) overseen by me. Our schedule was set by me and lunchtime was, usually, something decided last minute. 

I had never preplanned lunches.

But then my sweet child turned three and stopped napping and off to preschool he went.

And with him, our spontaneous lunch dates.

Now I had to pack lunch.

As someone who loves to plan and organize, one may think that packing lunches for my tiny human may just be the best thing ever for me.

But it's not. In fact, many mornings I stare into our pantry begging for food (preferably healthy) to jump into his lunch box and pack itself. Sadly this has never happened.

The biggest challenge, however, (which I'm sure many parents out there can relate to) is that my child likes about three things. And just when I think I have those three things figured out he changes his mind.

So what's a mom to do?

Unfortunately, I have no magic solution. If I did, there would be no need for posts like this or the other zillion lunch idea blog posts out there. Kids will be kids and that driving us parents totally crazy.

So, I've decided to start packing him a lunch that is both healthy and fun, easy and practical. Besides, lunch is the one meal each day where I won't feel compelled to cook him ten different things just to see that he gets enough to eat.

If he's hungry, he'll eat.

With that in mind, I always try to pack him at least one thing I know he will love. Horizon Organic Mac n Cheese is always a winner. As with most 3.5 year olds, my small child can't get enough of the cheesy good stuff. He also loves LOVES fruit- especially berries and grapes- and is a very happy camper when I pack a Horizon Organic, Organic Lowfat Milk in his lunch. I don't do it everyday (you know, gotta keep him on his toes), but he always thanks me for "the milk in his lunch" when I do. 

Of course, I also try to pack a vegetable each day; my expectations that he will actually eat it? Very very low.

Since Octavian started school nearly a year ago, Horizon Organic has remained one of his favorite lunch box additions.
