Who ever said cake is only for birthday parties? Today I'm taking a little cake break with my small human in celebration of summer, ice cream and fun.
Did you guys know that July is National Ice Cream Month?!? I did not know. I mean, if you ask me, every month is ice cream month! BUT, July is my birthday month so I suppose maybe, just maybe, I should take it as a sign or something.
Maybe that I should eat more ice cream?
I don't know about that, but I will literally take any excuse to ice cream, so I'll take it.
The other afternoon I decided to surprise my favorite small human (Octavian, if that wasn't obvious) with a little ice cream cake date as an after school treat.
That's right. Ice cream CAKE.
My child is a huge fan of surprise "special" treats and an even bigger fan of ice cream, so I knew this would be extra special. I love all things ice cream and cake, so no matter how I sliced it, I knew it would be good.
Before you guys start thinking i'm some super mom or something, let me share a little secret with you...
I most definitely did not make this ice cream cake. I had some help.
Ok, a lot of help.
Coming in many different shapes, style and sizes (including original Carvel®, Jon Donaire® and OREO®), I love Ice Cream Cakes celebrate the deliciousness of cake and ice cream combined! I picked mine up from my local Safeway store, but these yummy cakes are available in grocery stores in the bakery or freezer section nationwide, so you won't have to look far to find the perfect ice cream cake.
Since it was just going to be me and Octavian, I decided to go with the (adorable) small round cake and fancy it up with some whipped cream cheese icing and frozen berries. Totally not necessary, but my kiddo is a berry monster. Besides, I thought it would be fun to try my hand at cake decorating without the actual cake baking.
Super easy, you guys. Simply plop your berries on top, pipe your frosting and return to the freezer until ready to serve.
My child was SO EXCITED!
I mean, I don't often surprise him with whole ice cream cakes, so you can imagine the surprise when I pulled this very berry topped cake out of the freezer.
By the end of the day, it was gone.
Don't worry, my husband came home and helped us finish it off (although, let's be honest here, we didn't really need the help).
Within this same week we devoured our second I Love Ice Cream Cakes with our neighbors and friends just because.
Actually, it may have had something to do with a last minute late afternoon to evening summer playdate including several hungry young children and several (slightly) intoxicated (very responsible) adults.
That much larger sheet cake was also finished by the end of the evening.
I warn you- the crunchy cookie middle is AMAZING and by far my favorite part... aside from the frosting.
I am definitely team frosting.
