Oven Roasted Cauliflower with Sesame Ginger Sauce

It's been less than a week since my last post, but it may as well be forever because the last 6 days have been jam packed.
driving...oregon (yay!)...eating...snow...eating...driving...home!...sick kid...doctor...doctor again...sleep...what sleep?...cooking...cooking...doctor...cartoons...
You know, my life, in a nut shell.
This past weekend we spent a couple nights in beautiful Grants Pass, Oregon right on the Rouge River. We stayed at Weasku (pronounced we-ask-u) Inn and could not have been happier with our stay. Delicious buffet breakfast every morning, late afternoon appetizers (Octavian cleared them out of fruit each evening) and fresh baked cookies and milk each night. The cabins were clean, spacious, updated and totally comfortable for our party of two plus one (sadly, no photos- my child is like a tornado when he enters a room).
We had no set itinerary for Oregon. In fact, I've found that whenever I travel with my 3 year old it's better to just wing it (assuming, of course, that accommodation won't be difficult to find). For example, originally we planned to move from Grants Pass to the Oregon Coast on Sunday and stay the night. What happens? Octavian's cough happens. Although he was acting perfectly happy, no fever, no green stuff oozing from his nose, the cough was getting worse. It was probably a good time to head home.
So what did we do in Oregon?
We ate. a lot! Pizza, cookies, pastries, trout in a lemon butter sauce, mac n cheese, bagels, bread and butter, wine, etc. Not many veggies and fruit, but ALL the carbs I could get my hands on.
My toddler, who has been to only a few hotels in his short life, was happiest jumping around and playing in the hotel room. We went for a walk down by the Rogue River (which was just outside our cabin); unfortunately, Octavian must have missed the warm fire in our cabin because he thought it was a good idea to run in the river after the rock he had thrown in.
You guys, this was NOT a good idea. Thanks to all the rain the west coast has been slammed with over the past month, the Rogue is raging, and my daring child could have...well, let's not go there. Thank goodness for my husbands fast reflexes.
We moved away from the river and the idea of fishing and decided to go for a little hike. Well, either Google led us down the wrong road (doubtful) or we could not go down the street far enough due to the snow and ice because we could not locate the trailhead.
Plan C. Find the closest green patch on Google Maps and drive there.
We found ourselves at a snow covered park on the river. You guys, it was the perfect place to just get out and explore with a toddler. I was ready to pack my bags and move to Oregon right then and there.
After our little park adventure, the cough really started to creep in.
Here's the thing, Octavian gets recurring croup. He is currently on preventative medication to decrease the frequency, but it seems that every time he picks up a little cold or flu virus (weekly), the cough is sure to follow. For most kids, the cold would go away within a couple days and they'll be as good as new. And since kids are disgusting germ carriers anyway, you may not even notice that your kid was sick. For Octavian, however, even the smallest virus can trigger inflammation in his upper airway resulting in the barking cough.
Octavian has had croup in the past that has knocked him out with the cough, the fever and all the other wonderful flu-like symptoms that follow a kid around for (what feels like) forever.
And then he gets what I call "the other croup". Basically, the super annoying, nasty sounding cough, but that's it. No fever, no green stuff, no grumpy toddler; just rainbows and sunshine and...a barking seal.
Oh my gosh, you guys, the looks I get from strangers when I go out in public and the comments I hear from parents in his preschool- it's humiliating. Even worse, I feel like I have to defend myself (and my child) and explain that I am not that horrible, selfish Mom that sends her sick and miserable child to school to spread his nasty germs.
But, I get it. My kid sounds like a seal. A very loud, disruptive, barking seal. So, I give up.
On that note, before my child wakes up crying, wondering where I went, I should probably wrap things up- after all, this is the FOURTH night I have attempted writing and publishing this post.
Thanks to a lovely weekend stuffing my face with everything I could get my hands on, I decided I would really get my veggies this week. Cauliflower was on obvious choice when I headed out to the market late Sunday night. What better than oven roasted cauliflower in a sesame ginger sauce?
Light and delicious, eat this cauliflower with a side of greens and some grilled chicken and dinner (or lunch) is good to GO!
Oven Roasted Cauliflower with Sesame Ginger Sauce
Prep Time: 15 minutes | Cook Time: 25 minutes
Total Time: 40 minutes
Yield: 4 servings
Type: Side + Appetizer, Vegetarian, Asian, Healthy
FOR THE CAULIFLOWER
1 large head cauliflower, chopped into small florets
1-2 tablespoons olive oil
salt + pepper
FOR THE SESAME GINGER SAUCE
1 tablespoon canola oil
1 tablespoon fresh ginger, grated
6 cloves garlic, minced
1/3 cup water
3 tablespoons soy sauce
2-3 tablespoons red wine vinegar
2 teaspoons brown sugar
1 teaspoon toasted sesame oil
2 green onions, chopped
Sesame seeds, for serving
Preheat oven to 425 degrees F and line a large baking sheet with parchment paper.
In a large mixing bowl toss cauliflower florets with olive oil and salt and pepper. Transfer cauliflower to prepared baking sheet and arrange florets in a single layer. Bake for approximately 25 minutes, or until fully cooked and just starting to brown at the edges.
Meanwhile, as the cauliflower cooks, prepare the sesame ginger sauce by whisking together all the ingredients except for the chopped green onions until fully combined. Add green onions. Store sauce in the refrigerator until ready to eat.
When cauliflower is fully cooked, remove from the oven and transfer to a large bowl or plate. Serve immediately with the Sesame Ginger Sauce.
