It is no secret that cauliflower is probably my favorite vegetable. I always have at least one head of this lovely cruciferous vegetable in my house at any given time because I cook with it so often. In fact, cauliflower has officially replaced zucchini and broccoli as my go-to healthy food.
Now, if you're new to the cauliflower club, don't let past memories of gross, mushy and flavorless steamed cauliflower scare you away. Cauliflower has tons of potential when prepared properly. In fact, cauliflower is like a blank canvas just waiting to be made into a piece of culinary art.
Ok, so that may be a bit too deep a statement for this veggie, but cauliflower does a wonderful job of picking up and enhancing whatever flavor you're looking to achieve.
Take these easy buffalo cauliflower bites, for example. All the delicious, tangy flavor of buffalo wings without the mess and calories. I've never been a huge fan of chicken wings, so this substitution was an easy one, but if you have any doubts about the powers of cauliflower than this recipe is for you. Seriously, only five minutes to whip together and you're good to go.
Easy Buffalo Cauliflower
Prep Time: 5 minutes / Cook Time: 25 minutes / Total Time: 30 minutes
Yield: 4 small servings
1 large cauliflower, cut into small florets
1/3 cup hot sauce (I used Frank's RedHot)
2 tablespoons butter, melted
1 tablespoon olive oil
1 tablespoon fresh lemon juice
1/2 teaspoon garlic powder
1 teaspoon salt
- Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper and set aside.
- In a small bowl whisk together all the ingredients except for the cauliflower. Then, in a larger mixing bowl, toss together the cauliflower florets and mixed buffalo sauce until cauliflower is evenly coated.
- Spread the cauliflower evenly over lined baking sheet and bake for 20-25 minutes or until cauliflower is fork tender and browned around the edges.
