Three Easy Vegetarian Good Natured Soup Recipes

Fall is here! Which means chilly days, bitter nights and big bowls of steaming warm soup. Delicious, hearty, feel-good soup doesn't need to be time consuming to prepare or full of heavy creams and meats. Soup during the fall and winter months is the equivalent to salad in spring and summer- aaand, we all know how much I LOVE my salads (unless you're new here, then in that case, hi! I love salad. You too?)

But, we're not here to talk about salad today; today we're here to talk about my other favorite- soup! I love soup for many different reasons, but mostly because soup is just so darn good! In my world, where I much prefer sunny skies over darkness, soup is that little ray of sunshine on all those gray and glooooomy days.

Besides, I'm one of those people who are always cold, and soup helps fix this problem.

Soup also makes eating veggies about the easiest thing in the whole world! And now, thanks to these Good Natured Soups, we can all have our own little piece of sunshine (and eat a whole bunch a yummy veggies while we're at it). Coming in three varieties, Hearty Corn and Chipotle Chowder; Hearty Tomato with Spinach and Roasted Garlic; and Hearty Lentil with Garden Vegetables, these soups are great as-is OR, if you're anything like me, as the starting point for your very own Meatless Monday Masterpiece (because, confession, I find it almost impossible to stick to a recipe or eat anything as-is).

So why do I love these soups so much? Well, where to begin...

Good Natured Soups offer ¾ cups of vegetables per serving, all three varieties are vegan, contain no genetically-modified ingredients, preservatives and colors from artificial sources (!!!) And, they come in boxes rather than cans which (I hear) is much better. Good Natured Soups also use bean powders and vegetable purees rather than dairy creamers to give the soup the delicious creamy taste and texture we all love (ok, at least I love). And while you don't have to be vegan or even vegetarian to enjoy these soups, if you're worried about the taste, don't be. Promise. If you want a little guidance, however, the Hearty Corn and Chipotle Chowder is my FAV. I can't help it, this girl loves her corn, and chowder.

For todays post, I am sharing a few ways to add even more veggies to your life thanks to a ton of help from these awesome soups. Working as the delicious base, I'm using each Good Natured Soup to eat all my veggies and (probably) unload the veggies from my refrigerator that are on the brink of the bin. 

These are often what I refer to as: Kitchen Sink Soups. And, it is often these bowls of goodness that make for the easiest, warmest nights around my house (they also require less dishes which always gets an A+ in my book).

Simple, yummy, healthy, reduce food waste AND the whole family loves 'em. Because, sometimes, homemade isn't possible- but the only person that needs to know this is the cook.

Hearty Tomato with Spinach and Roasted Garlic

Prep Time: 5 minutes / Cook Time: 15 minutes / Total Time: 20 minutes
Yield: 3-4 servings

Ingredients:
1 (17-ounce) tetrapak carton Good Natured Soup in Hearty Tomato with Spinach and Roasted Garlic
1 teaspoon olive oil
1/2 yellow onion, diced
1 (14.5-ounce) can diced tomatoes
6 ounces (1 bag) fresh baby spinach
Fresh ground pepper, to taste

Instructions:
Heat a medium saucepan over medium heat. Add oil and diced onion and stir to coat. Cook onions for 4-5 minutes, or until soft and translucent. Add canned tomatoes to the onion and stir. When liquid from the tomatoes comes to a boil, add the spinach and cook, stirring continuously, until spinach has wilted. Finally, add the tetrapak carton of Hearty Tomato with Spinach and Roasted Garlic Soup and bring soup to a low boil. When boiling, reduce heat to low and season to taste. Remove from heat and serve warm.

Pair this soup with:
Classic grilled cheese sandwich
Green salad
Mozzarella Sticks
Crusty wheat bread + butter


Hearty Lentil with Garden Vegetables

Prep Time: 5 minutes / Cook Time: 15 minutes / Total Time: 20 minutes
Yield: 3-4 servings

Ingredients
1 (17-ounce) tetrapak carton Good Natured Soup Hearty Lentil with Garden Vegetables
1 teaspoon olive oil
1/2 yellow onion, diced
1 yellow bell pepper, seeded and diced
1/2 cup chopped celery
1 cup cherry tomatoes, halved
1 avocado, pitted and sliced
Sour cream and/or cheese, for serving (this will make the recipe no longer vegan)

Instructions:
Heat a medium saucepan over medium heat. Add oil and diced onion and stir to coat. Cook onions for 4-5 minutes, or until soft and translucent. Add diced bell pepper and chopped celery to the pot and continue to cook for an additional 1-2 minutes. Stir in Good Natured Soup Hearty Lentil with Garden Vegetables and cherry tomatoes and mix well. Bring soup to a low boil (be careful here as this soup is thicker and will require more stirring). Reduce heat to low and simmer for an additional 3-4 minutes, or until all the vegetables are soft and cooked. Remove from heat and serve with fresh avocado, sour cream and shredded cheese, if desired.

Pair this soup with:
Bread and butter
Rice (on the side or in the soup)
Sausage (if you're a meat eater)
Swiss on rye grilled cheese
Cornbread

And now, my favorite, because I have a thing for corn, apparently...

Hearty Corn and Chipotle Chowder

Prep Time: 5 minutes / Cook Time: 15 minutes / Total Time: 20 minutes
Yield: 3-4 servings

Ingredients:
1 (17-ounce) tetrapak carton Good Natured Soup Hearty Corn and Chipotle Chowder
1 teaspoon olive oil
1/2 yellow onion, diced
1/2 orange/yellow/red bell pepper, seeded and diced
1 cup corn kernels (fresh or frozen)
1/2 jalapeno, diced (optional, it will make it spicy)
Chopped green onion, for serving
Monterey Jack cheese, for serving

Instructions:
Heat a medium saucepan over medium heat. Add oil and diced onion and stir to coat. Cook onions for 4-5 minutes, or until soft and translucent. Add diced bell pepper, corn and jalapeno (if desired) and cook for an additional 2-3 minutes, stirring frequently. Carefully stir in the Hearty Corn and Chipotle Chowder into the vegetables and bring to a low boil. Reduce heat to low and simmer until ready to serve. Serve this soup garnished with chopped green onions and Monterey jack cheese, if desired.

Best served with...
Grilled Chicken
Side Salad
Rice and beans (on the side or in the soup)
