Southwestern Stuffed Sweet Potatoes with Ground Turkey

I am a big fan of sweet potatoes.  Yet, somehow, I didn't really discover them until about a year ago.  I still have no idea what took me so long.  Perhaps it's because sweet potato casserole was never a staple holiday dish in my family and so I never had an opportunity to try them.  Two years ago I tried them for the first time at Thanksgiving and while I thought they were good, it didn't occur to me to make them again.  I always thought sweet potatoes were just for sweet potato casserole.

My entire outlook on the sweet potato changed this summer.  In fact, sweet potatoes became my summer staple (along with zucchini noodles).  My favorite way to eat them is stuffed full of taco spiced ground turkey and a heaping spoonful of sour cream.  But, they're pretty amazing stuffed with just about anything.

Southwestern Stuffed Sweet Potatoes

Serves 5 very well stuffed potatoes


5 medium sweet potatoes
1 tablespoon olive oil
1 large yellow onion, chopped
1 pound ground turkey
1 packet taco or fajita seasoning (I used Trader Joe's brand)
1 can diced tomatoes
I can black beans, drained and rinsed
1 bag frozen sweet corn (approximately 2 cups)


Tomatoes, chopped (type doesn't matter, just pick your favorite)
Green onion, chopped
Cilantro, chopped
Cheese, sour cream, guacamole 
Hot sauce


Sweet Potatoes:

  1. Preheat oven to 450 degrees
  2. Line cookie sheet with tin foil
  3. Scrub sweet potato under running water and dry well with paper towel
  4. Poke all over with a fork
  5. Place sweet potatoes on cookie sheet and put in oven for 30 minutes
  6. Flip over and set timer for 30 more minutes (15 minutes if they are on the smaller side)
  7. You know they are done when you can easily insert a fork 

Taco Seasoned Ground Turkey:

  1. Heat a large saute pan over medium heat and add the olive oil.  Once hot, place the onions in the pan and saute until translucent (approximately 5 minutes)
  2. Add the ground turkey to the pan and break into small pieces
  3. Add the taco seasoning and several tablespoons of water to the turkey and onion mix. Add the can of diced tomatoes, mix evenly.  Cook on medium to low for 8-10 minutes or until meat is fully cooked and extra liquid has evaporated
  4. Once cooked, set aside

Build you loaded sweet potato:

  1. Cut sweet potato lengthwise
  2. Start topping- ground turkey, corn, beans, tomato, cheese, sour cream, etc. etc.
